Well I am extremley hungover today! Was at a 50th party last night, far too many vodkas and jagermeisters - waaay over my syn allowance I'm sure, so trying to not use many today!
Only way to cure this hangover is for my slimming world Bacon & Egg Fried Bread Toastie. YUM!!

Slimming World Quiche...
I decided I needed something new to take to work as I work 12hour shifts to snack on when I get hungry. So seen a nice recipe for a quiche on a facebook page and decided to give it ago. Was lovely and perfect as its all free can eat as much as you like!
Also if you have little silcone cake cases you can make mini quiches, perfect for lunch boxes!

What you need:
- Any veg you like, I usually go for tomatoes, onions, mushrooms
- Bacon or syn-free sausages (Linda McCartney Red Onion & Rosemary sausages)
- Tub of cottage cheese
- Mixed herbs (I like chives, garlic, basil or oregano)
- 3 eggs
- Salt & Pepper
- Prepare what veg you choose. I fry my onion and mushrooms, but keep them tomatoes raw
- Mix together eggs and cottage cheese
- Lay the veg out in a oven proof dish then pour quiche mix over the veg
- I usually add some tomatoes to the top
- Put the dish in the oven at gas mark 5, for around 40mins, or until the quiche is set
Baked Bean Lasagne...
I love my pasta dishes, so this was something that is quick and easy to make and proper filling comfort food! It sounds pretty disgusting but its lovely! (I did try to use BBQ beans once and it made it horrible so I will stick with normal beans in future)

- Lasagne sheets
- 1 onion, diced
- 2 tins baked beans
- 1 tin chopped tomatoes
- Mixed herbs (I use basil and oregano)
- 2 garlic cloves, crushed
- Splash of soy sauce & worcestershire sauce
- Salt & pepper to season
- Grated cheese (When making for myself I use 40g Cathedral City Lighter)
- Pre-heat oven to Gas Mark 5
- Fry onion & garlic until soft
- Add in baked beans, tomatoes, herbs, soy & worcestershire sauce
- Season and stir well
- Put half the mixture into dish, then small bit of cheese, then lasagne sheets. Then add remaining mixture and rest of the cheese
- Cook for about 25-30 mins so pasta is cooked and cheese is golden brown

Worlds best Lasagne... Fact!
Well this is a recipe I found on a slimming world facebook page and is by far THE best lasagne I have ever tasted! If you were to go to pizza hut (like I did today) you'd blow a massive 21 syns on a plate of lasagne and isn't nearly as nice as this one! :)

- 1 tray extra lean minced beef
- 1 large onion, diced
- Mushrooms and any other veg you like
- 2 garlic cloves, crushed
- 2 beef stock cubes
- 2 tbsp tomato puree
- 2 tins chopped tomatoes
- 1 tsp basil
- 1 tsp oregano
- 1 tsp sweetener
- Salt & pepper to taste
- Lasagne sheets (approx 8)
- 1 tub garlic & herb philadelphia light
- 3 laughing cow extra light triangles
- 1 large splash of semi-skimmed milk
- 90g cheddar cheese, grated
- Brown the mince with the onions, garlic, mushrooms and rest of veg
- Crumble in the stock cubes
- Add the tomato puree and tinned tomatoes
- Add basil, oregano and sweetener
- Bring to the boil, stirring well then turn down the heat and leave to simmer for approx 20mins.
- Season to taste.
- When red sauce is almost ready, add philadelphia, laughing cow cheese and splash of milk to a saucepan and slowly increase the heat until both cheeses are melted and smooth
- When both sauces are ready layer in a oven proof dish. Red sauce first, then half lasagne sheets, then white sauce. Repeat this again.
- Top evenly with grated cheese then put in oven on medium heat for approx 20mins, until pasta is cooked and cheese is golden.

Well hi everyone! You may think this is a strange blog title, but its the only way I can stick to my healthy eating and be focused by having something like this to keep me determined!
So after many on-off diets and following different plans, I have finally decided on sticking to Slimming World. You can eat whatever you like aslong as it is cooked healthy and using the proper stuff so this is my blog full of my foods I love - it helps to keep them all in the one place for me instead of hunting for a recipe :)
